Learn how to use a matcha whisk (chasen) to create smooth, frothy matcha. This guide covers preparation, whisking technique, and common mistakes to avoid.

Quick answer

To use a matcha whisk, sift 1–2 teaspoons of matcha into a bowl, add a small amount of hot water (about 160°F), and whisk in a zigzag motion until frothy—avoid circular stirring.

Why the chasen matters

A traditional chasen bamboo whisk is designed to break up matcha clumps and create a fine, even froth. Unlike electric frothers, it gives you control over the texture and honors the ceremonial method.

If you're new to matcha, the whisk may feel delicate—handle it gently and rinse it after each use to keep the tines from bending.

Choosing the right water and bowl

Water temperature is critical: too hot and the matcha turns bitter; too cool and it won't froth properly. Aim for water just below boiling, around 160°F (70°C).

A wide, shallow bowl gives the whisk room to move. If you don't have a matcha bowl, a regular cereal bowl works in a pinch.

How to whisk matcha in 6 steps

  1. Sift the matcha: Place 1–2 teaspoons of matcha powder into a dry bowl and sift it through a fine mesh strainer to remove clumps. Skipping this step leads to lumpy matcha.
  2. Add a little water: Pour about 2 ounces of hot water (160°F) into the bowl. Use just enough to cover the powder—this makes whisking easier. Water that's too hot will scorch the matcha and make it bitter.
  3. Whisk in a zigzag motion: Hold the chasen upright and move it back and forth in a quick W or M pattern, not in circles. This aerates the matcha and creates foam. Circular stirring creates clumps and less froth.
  4. Add the remaining water: Once the matcha is smooth and frothy, add the rest of your hot water (about 6 ounces total) and whisk briefly to combine. Adjust water amount to your taste—more water for a thinner drink.
  5. Tap and rinse the whisk: After pouring your matcha, tap the whisk gently on the rim of the bowl to remove excess liquid, then rinse it under cool water. Do not use soap. Soap can damage the bamboo and leave residue.
  6. Dry and store properly: Shake off excess water and let the whisk air-dry on a whisk holder or upright in a cup. Store it away from direct sunlight. Proper drying prevents mold and keeps the tines from warping.
